Rice Pudding for One (or Two)
1 egg
1/2 cup milk (I used almond)
2 T brown sugar
Dash salt
Dash cinnamon
Dash nutmeg
Dash vanilla
1 1/2 cups cooked jasmine rice
In a microwaveable bowl, whisk the egg until frothy. Add all remaining ingredients except rice. Whisk again until fully incorporated. Add rice. Microwave on high for 45 seconds. Stir. Repeat until mixture is no longer soupy. Enjoy.
BlendTec Potato Soup
1 baked potato
1/2 cup black beans
2 large button mushrooms
2 handfuls spinach
1 tomato
1/2 tsp taco seasoning
1/2 cup broth
